Restaurant Bolette has its name from Bolette Helmers Olsen. Bolette is the name of the women who invented the hotel operation, and built the first hotel stage at the end of 18th century on the same spot as Hotel Victoria stands today. The motto of Restaurant Bolette is "easy - planet - enjoy". With these three words, Bolette will convey that it is going to be a natural and sosial meeting place for every occasion.
